Chocolate Chip Zucchini Muffins

Ingredients:

Wet ingredients:
2 large eggs
1/2 cup veg oil
3/4-1 cup brown sugar
1/2 teaspoon vanilla extract
2 cups grated zucchini

Dry ingredients:
2 cups flour (original recipe called for white, I use a mixture of white and whole wheat)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cardamom
1 teaspoon cinnamon

1 cup semisweet chocolate chips


Directions:

Preheat 350 degrees

Mix wet ingredients in large bowl. Mix dry ingredients in separate bowl. Stir dry ingredients into wet ingredients until just combined. Fold in 1 cup of semisweet chocolate chips.

Spoon into muffin tins. Bake 25-30 for standard muffin size, 15-20 for mini-muffins. Bake until puffed and golden brown, a knife inserted into muffin center should come out clean.

(This makes 12 muffins. I always double it. Any leftovers freeze really well. The original recipe came from a Moosewood Cooks at Home cookbook.)
