Zucchini
Description
A long, thin vegetable with green peel, light flesh and a mild flavor.
Preparation
When zucchini peaks you often end up with more than you can reasonably use before it spoils. That's the time you need to start grating it, packing it in freezer bags and storing it in the freezer. I store it in 2- or 4-cup increments since that's what my favorite zucchini muffin recipe needs. There's nothing like a little taste of summer in the dead of winter.
